Christine's chocolate takes the cake

Bumpy Cakes were invented by Sanders Bakery sometime in
the 1920s. The batter was devil’s food and the icing was made
out of actual fudge candy. Those distinctive ridges on top of
the cake were filled with white buttercream icing.

Originally called Devil’s Food Buttercream Cakes, they were
made in a loaf shape until the 1940s, says Diane Lynch. “And
because people kept calling and asking for the cake with the
bumps, the company trademarked the name Bumpy Cake
sometime in the 1980s,” Lynch says.

Currently the marketing director at Morley Brands, Lynch
worked at Sanders from 1987 until 2002 when the company
was purchased by Morley.

Guest Panelist David Lawrence’s father worked for Sanders in
the ’60s. “It actually turns out that one of his jobs was to hand-
dip the Bumpy Cakes in the chocolate. In those days, the cake
was a staple,” Lawrence says. “Now, people have taken them to
the next level — they are rich and elegant enough for a special
celebration.”

Today, you can still find Sanders Bumpy Cakes (although now
they are flash-frozen) at Morley Candy Makers stores as well as
at Hiller’s Markets, Farmer Jack and at some Meijer’s.
However, many bakeries and supermarkets now create their
own versions of this popular and delicious cake.

We tasted bumpy-style cakes from five places. Four of them
were freshly made, and the one from Sanders was frozen. The
panel thought the sample from Christine’s Cakes in Clinton
Township was extraordinarily good.

In a blind tasting, The Detroit News Taste Panel rated the
following bumpy-style cakes on taste, texture and appearance
on a scale of 1 (poor) to 5 (excellent).

Looks wonderful. The most delicious butter cream frosting
under the chocolate. Wonderful chocolate icing. Perfect devil’s
food and butter cream. Wonderful velvety texture. Rich
chocolate flavor. This is bumpy-style cake sexed up — rich,
silky and creamy.
